Make the syrup by melting the sugar in a hot frying pan or saucepan.

Pour the syrup in the bottom of a large greased mold or individual molds.

Beat the sugar, egg yolks, lemon water and orange juice well. Pour on top of the syrup.

Place the mold(s) in a roasting pan half full of water in a preheated oven at 180oC and cook for about 40-50 minutes.

Allow to cool and serve.

The experts say serve with a touch of cream or condensed milk.
