This is a very quick and easy dessert to prepare and will delight those with a sweet tooth. Many restaurants in Spain will offer a tocino as a pudding and you can buy them at the cold counter in most Spanish supermarkets – not all are created equal. Once you’ve tried a home made version you’ll never want a factory one again!

Toffee Pudding – Tocino De Cielo – Spanish Recipe

Ingredients

  • 200 g sugar to make syrup
  • 12 egg yolks
  • 200 g sugar
  • 1 tbsp lemon water made from 1 lemon boiled in 250ml of water with 35g sugar for 15 minutes
  • 25 ml orange juice

Instructions

  1. Make the syrup by melting the sugar in a hot frying pan or saucepan.
  2. Pour the syrup in the bottom of a large greased mold or individual molds.
  3. Beat the sugar, egg yolks, lemon water and orange juice well. Pour on top of the syrup.
  4. Place the mold(s) in a roasting pan half full of water in a preheated oven at 180oC and cook for about 40-50 minutes.
  5. Allow to cool and serve.
  6. The experts say serve with a touch of cream or condensed milk.
