I was terrified of adding this recipe when I was researching, writing and editing the book Spanish Village Cooking – Recetas del Campo, the cookery book for the small village of La Murta here in Murcia, Spain.

Why?

Because every family in La Murta has their own special way of making this dessert, everyone makes it slightly differently and everyone’s recipe is the best! When the book was published and people started to buy it and read it I was getting comments about how this recipe was “wrong”, “we don’t make it like that”, “we add more honey/lemon/flour…”

When I first moved to Spain I frequently saw tins of fish in escabeche or mussels in escabeche in the supermarkets, but I never really liked the look of them. I’m quite an adventurous eater, but the tins didn’t really catch my attention and when I tried them I wasn’t that impressed. When my friend Nasi said she wanted to cook Estornino en Escabeche for the La Murta cookery book I was intrigued. Would this be different, would it change my mind?

I think escabeche is a Marmite type dish, you either love it or hate it. I love it, when it’s home made!

Escabeche is found all around the Mediterranean, it is usually made with fish or seafood (sometimes with chicken, game or rabbit) and consists of an acidic marinade of vegetables & vinegar. This recipe works well with any oily fish – mackerel, herring or bonito. It is often served cold the next day after the flavours have had plenty of time to be absorbed. Make sure you have plenty of fresh Spanish bread for dipping in the sauce!

The traditional Spanish bread, pan, is a long loaf, kind of similar to the French baguette. You can also buy a pan redondo, a round loaf. In the traditional bakeries in Spain they make the bread daily and you can buy it warm in the mornings to have with your olive oil for breakfast. Of course you can also pop into a supermarket and buy their version of bread, which is usually fluffy, flavourless and hollow.

In Spain, especially in the Mediterranean area, there have been guilds of bakers for over 750 years.

Bread comes at every meal time in Spain – tostada y tomate for breakfast, a bocadillo for second breakfast, bread with your menu del día and of course bread to transport the tapas at supper! In the village of La Murta, where I live, home to 101 people, we make about 200 tonnes of bread per year – more than the weight of a jumbo jet! That’s about 548 kilos of bread per day. If the villagers had to eat it all we’d be eating over 5 kilos of bread each per day! It’s a good job our bread is enjoyed all around the region.

Giant Paella – our recipe ONLY makes enough for 6 people – not 200

Here in Murcia we don’t call our rice dishes paellas, we call them arroces. Paellas are Valencian, Arroces are Murcian.

We’ve eaten this dish at our friend’s house, Virtudes, so many times that I’ve lost count. Whenever there’s a big party at the caves Virtudes comes over with her huge rice pan and gets cooking. She usually has a small army of helpers and can get rice cooked for 40-50 people without breaking a sweat. I tried to make it a few times in the past, but I was missing that one step – cooking the spare ribs in a pressure cooker – this is the secret to tender meat and a delicious stock. With this recipe you can’t go wrong! Watch the video above to see an expert in action.

If possible it is best to use a paella pan, which has a large base and high sides, so the heat is spread evenly and the rice has room to expand. A large frying pan also works.

Visit from the Academia de Gastronomía de la Región de Murcia to La Murta

On May 23rd the Academia de Gastronomía de la Región de Murcia visited the small village of La Murta to celebrate the success of their new recipe book with a tasting lunch of 13 dishes prepared by the Chefs of La Murta. Eleven chefs prepared their own recipes for the menu chosen by the Academy from the book. Also three La Murta wine makers provided their red/white & sweet wines for the tasting. The local charcuterie shop provided embutidos (Spanish sausages) and the three bakeries provided the bread. Twenty eight visitors from the Academy enjoyed the 13 course degustacion menu.

The book, Spanish Village Cooking – Recetas Del Campo, was published in March 2014, three months after the initial idea. It is written in Spanish and English, with more than 80 photographs. Thirty five cooks offered their family recipes to produce more than 150 traditional Murcian dishes. Contributions also came from a few cooks who now call La Murta their home, with a dish from Moratalla, recipes from Extremadura and of course one from Debbie herself. The first print run has already sold out, with more books on their way.

Contributions from the profit for the book will go to the fiesta commission to spend on the yearly village fiesta in May.

El día 23 de mayo 2014 La Academia de Gastronomía de la Región de Murcia ha visitado a La Murta para celebrar el éxito del libro de recetas con una comida de degustación de 13 platos preparada por los chefs de La Murta.  Once chefs han preparado sus proprios recetas según una lista seleccionada del libro por La Academia. También han participado tres bodegas particulares de vino del terreno, los tres panaderías de hornos de leña del pueblo y la famosa charcutería de embutidos caseros.  Han asistido 28 personas de La Academia con sus invitados.

El libro, “Spanish Village Cooking – Recetas Del Campo”, fue publicado en marzo de 2014, tres meses después de la idea inicial. Está escrito en español e inglés, con más de 80 fotos. Treinta y cinco cocineros ofrecieron sus recetas familiares para producir más de 150 platos tradicionales murcianos. Las contribuciones también provienen de unos pocos cocineros que ahora llaman a La Murta su casa, con un plato de Moratalla, recetas de Extremadura y por supuesto uno de Debbie misma. Ya se ha vendido la primera tirada, con más ejemplares en su camino.

Se da una proporción de los beneficios de la venta del libro a la Comisión de Fiesta para gastar en la fiesta patronale del pueblo que se celebra cada año en mayo.
